    since I got the Durango I have smoked/cooked:
    (as best I can remember)
    at least
    4 half racks st lewis cut ribs (Mad Hunky GP!!!)
    with white birch wood

    2 spatchcock chickens (Mad Hunky poultry brine and GP!!!)
    with white birch wood

    12 half racks baby back ribs (Mad Hunky GP!!!)
    with cherry wood

    40# whole piglet (Mad Hunky GP!!!)
    with cherry wood

    13 hamburgs +
    9 brats
    with cherry wood

    shoulder picnic ham +
    4 thumperburger jr's +
    4 brats
    with cherry wood

    3 spatchcock chickens (Mad Hunky poultry brine and GP!!!)
    12 brats
    with cherry wood

    bacon wrapped chicken fingers (Mad Hunky poultry brine and GP!!!)
    4 brats
    with cherry wood

    2 racks st lewis cut ribs
    3 chicken breasts (Mad Hunky GP!!!)
    4 brats
    with cherry wood

    2- 4 pound meat loafs
    (Mad Hunky poultry brine and GP!!!)
    with cherry wood

    2 english cut roasts (Mad Hunky GP!!!)
    with cherry wood

    whole apple pie stuffed prk loin (Mad Hunky GP!!!)
    with cherry wood

    10 pounds o meatballs from hell in grape jelly sweet an sour sauce...
    (Mad Hunky poultry brine and GP!!!)

    6 racks baby back ribs (Mad Hunky GP!!!)

    all were done the hard way
    with a major hot spot at the firebox end of the cooker...

    even still,,,
    they ALL were great cooks by my estimation,,,
    whole lotta complements and zero complaints to date...

    now I gotta figure the great results were accomplished by drawing on many (30+)years of experience
    modifing and utilizing all manor of wicked and infernal cooking contraptions and jury rigged outfits
    burnin charcoal and wood...
    but I admit its been hectic doin the bigger cooks...
    well today got a new Yoder part I think will make my cooks a little more sane...
    no,,, I'm sure they'll be more sane...
    I can already feel the Zen getting nearer,,,
    almost within grasp...

            Yoder does seem to have issues with RF cookers. Not sure why... but yeah..that is gonna make things more even for sure. Might need a tad more wood, but small price to pay for a simpler cook. Nice!

              yesterday I cleaned(scraped) her down completely inside an it took less than 10 min cold...
              that may well be why no RF,,, plus you can slide the plate and open the hot spot for cooks requiring indirect HOT... versatility...
              yeah anyone here who has used a side box without tuning plates knows what dues I have paid up to this point and what stress is involved especially on full rack cooks...
              I elected to quit buying meat and instead save for the heat management plate because the time I'm putting in could be much less stressful and I think will produce comprable or better results...

              and on the Hunky products,,,
              well,,, I'm hooked,,, I'm an addict now...

              I have been answering any and all questions about:
              "damn thats an outstanding flavor blend,,, where can I git some o that spice"
              have written it out many times for folks,,, many local,,, some from Florida,,, California,,, Oregon etc...
              but it would help if perhaps next order include some business cards if you have them...
              (I am working my way up to acquiring any and all Mad Hunky swag you have Rich)

                    The HMS is a great addition to any of the Yoder stick burners to help even out the heat that typically comes from an offset. IMO a must have option for a Yoder offset... I really wish that Yoder would make a reverse flow stick burner as an alternative to the offsets.

                        That's what I meant. I was talking to Dave Sprigg at the Royal and mentioned this. He's the Aussie that's importing Yoders..and Mad Hunky..to Oz. Anyway... I mentioned this and he said they never will make one..and then got called away and I never got the story on that.
