        have some - partly for the sausage, which looks fantastic but primarily for giving me an idea on what slicing sausage to make next :-)

        I've got enough venison to knock up a chubby and it seem like a decent use ofa relatively scarce meat, thinking of using the secret hillbilly pepperoni mix for flavour.
        Though if your recipe's around anywhere ken I might try that instead - got plenty chillis :-)

        On the cheese front - I use low fat mature cheddar in sausage, has a higher melting point than full fat cheddar. Not sure how readily available it is over there, every supermarket sells it here.

              Man, I wish we were closer. I would pay you to make some of that for me. I don't have the tools nor space to make my own. I bet it tastes awesome.

                    2.5 TBS Salt
                    1 TBS Garlic Powder
                    1 TBS CBP
                    1 TBS Onion Powder
                    1 TBS Mustard Seed
                    1 Tsp Cure #1
                    1 Tsp Ground Coriander
                    1 TBS Ground Mustard Seed
                    1 Tsp Basil
                    1 Tsp Ground Nutmeg
                    5 oz. Water or Beer
                    6 Whole Jalapenos De-seeded & Chopped or run through grinder whole reserve liquid.
                    16 oz. Cubed Cheese
                    1/2 Cup Powder Buttermilk

                        Sounds like a great recipe, Ken.

                        Mike, you know you're just asking for trouble....You'll have to ask for your sausage making equipment back when YOU want to make some. Unless you could get him to make yours too. Yeah.......right!
