Hot wings dipped in blue cheese sounded good and I was making sausage anyway so why not make hot wing/blue cheese sausage. Sorry, but I didn't write down a recipe. And I didn't get any pics of the process but I did snap a few while I was cooking them
I used boneless skinless chicken thighs, kosher salt, black pepper, cayenne pepper, chili powder, granulated garlic, a little onion powder and a BUNCH of red pepper flakes. I seasoned the cut up meat then ground. Then I added hot sauce to the ground meat. I used Tapatio since it does not have vinegar (the last sausage I made with hot sauce seemed crumbly, possible from the vinegar.) Then I added blue cheese crumbles and folded them into the meat.
Here are a few of the sausages after resting overnight in the fridge.

These were hot enough to make me have the sniffles while eating them, but the cooling little pockets of blue cheese were great.
