Not really easy not knowing the HU's (Scovilles) of the pepper being used. Cayanne can vary pretty widely. .1% of the meat weight would seem to be somewhere to start, or about 5.5 grams. YMMV
Below is the seasoning amounts I liked best in my Bear Loaf, and I don't like things TOO Hot.
(Not counting the cure & liquids)
This was for exactly 12.5 pounds of Ground Beef:
Alright I threw in 1.5 TBS of cayenne pepper and a "pinch" of black pepper. Threw a little blow out in the microwave to taste..
There is a little heat! Might be just right...they are in the smoker now!
By the way...using Owens BBQ...TASTY! Can't wait for the full smoke/cook!

Going to put the smoke to them in a little bit after 2 hours of drying at 125.
Ya after my last batch of black sticks I backed way off on the smoke!
Apple for 3 hours. Just the right of smoke to compliment the sweetness. I'm guessing these are going to get spoken for real quick!
