  • accent vs morton tenderquick

    Is accent the same as mortons tenderquick. I have both in two recipes and did not know if they could be interchanged. Thanks for the help.

    Accent is just a seasoning enhancer where the TQ is the cure.

      Accent is full of MSG... some folks are allergic to that stuff. I wouldn't use it...

          You probably need to do some reading on what cure is... and what it does. As mentioned ccent is basically just MSG, where TQ is a nitrate/ite curing agent for producing hams, bacon and smoked sausages.

          Also as stated, I avoid MSG in any of my products or foods.

            That is kind of what i thought but was not sure. Dont think i will be using the accent dont like MSG either.

              Good move. Accent is a flavor enhancer, and really has no taste. I know some folks in the comp circuit use it, which to me, is a very dangerous (and careless) thing to do.

                MSG gives me a headache and makes me very tired, listless may even be a good word.

                    MSG = 1 part salt, 2 parts sugar... which is pretty much the "recipie" of Accent... I don't care for the stuff either,, just a little FYI, MSG is a natural "ingredient" allmost all food, (meat, fish, cheese etc) but has a much higher natural content in onions and garlic...

                          MSG doesn't bother me. I don't use accent, but if I eat something with MSG in it I'm not affected by it. Alton Brown did a show on it where they had a restaurant full of people and told one half they were getting chinese food with MSG and the other half didn't. The half that was supposed to get the MSG really didn't get it, but several people said they felt sick and had headaches.
