  • Apple-Bacon Sausage & some Basil Pesto Veggies.

    Grilled some sausage from a recent batch tonight and tossed together an easy veggie side dish. This sausage recipe is tweaked from a recipe book I have and I ended up with this....

    2 3/4 lbs pork butt
    1/4 lb homemade bacon
    1 cup apple cider
    2 small leeks, chopped (white parts only)
    1 granny smith apple, chopped
    1 TBS kosher salt
    1/2 tsp black pepper
    1/2 tsp lemon zest
    2 TBS fresh chopped parsley
    2 TBS fresh chopped rosemary

    I don't have pics of the process, but here is how it went down:

    While chilling meat, simmer cider in saucepan until thickens to a syrup. Then let cool
    Heat 1 TBS canole oil in a med. skillet and saute leeks and apples for about 5 minutes and let cool
    Season the meat with remainder of seasonings/herbs & grind

    Blend together with cider reduction and apple/leek mixture. Then stuff.

    While the chimney of lump was getting started I tossed together some brussel sprouts, mushrooms, and onion with some olive oil, garlic, pepper and then stirred in a couple tablespoons of basil pesto until lightly coated.

    And so are the veggies.

    The sausage is great but I might stuff into sheep casing next time cause it would be a great breakfast sausage alternative. The veggies rocked! And would work with any veggies you prefer.

              I have done the pesto treatment on a bunch of different veggies, always good. Especially in the bottom of a roasting pan with a little white wine while a pork loin drips onto them.
