Brisket burnt ends Boudin

A local BBQ joint ( with damn good meat) offered this as a special a few weeks back. Sadly I was out of town the 2 days of the week they are open so I missed out. But it couldn�t be forgotten.
Has anyone here made such a thing? If so, got a recipe or some insight?
