So I saw this video on Yahoo! the other day showing how to make super easy and quick home made mayonnaise with the stick blender. I wanted to post a link, but I can't find it. Search, there are plenty. Thought I would pan fry a burger today for lunch, so while it was forming that delicious crust, I made a stab at it. Got the stick blender oot along with the tall slender container that came with it. Plopped in two egg yolks, a generous pinch of salt, about a teaspoon and a half of Dijon mustard and a cup of light vegetable oil. Remembered that I had a container of roasted garlic in the fridge, so I plopped one clove in (OK, technically that makes it aioli, but whatever). Gave it a whack with the stick for about 30 seconds or so. Man this stuff is so much better than anything I have ever had from a jar I doubt that I will ever buy jarred stuff again! Super thick and creamy and wow what flavor. You could of course drop anything in there you like, Sriracha, Jalepenos, more mustard, whatever.... If you have a stick blender, I strongly encourage you to give this a try. No pictures, I mean it's mayonnaise.
2 egg yolks
juice of 1/2 lemon, or wine vinegar
1/4 tsp salt
1 1/2 tsp mustard
1 cup of lightly flavored oil, light olive, Wesson, etc.
I never use Canola oil, cause I think it just tastes nasty.
