  • Smoked Ham

    We'll, we seem to be on a smoked ham kick around here. I did a twice smoked ham for some folks during Thanksgiving. The kids got some and just gobbled it up and asked for more.

    So, the Mrs. and I went to the CostCo business center last week and I picked up a 10.5 spiral ham, the Kirkland brand. I will add, if anyone has a "business center" near them, go. I believe you need an executive membership but they are like a restaurant depot. Meat is good and inexpensive. A lot of local small business restaurant owners shop there. We got a ton a food at half it would probably cost me at the local grocery.

    Anyway, I used the regular recipe I always do but made two changes. Didn't have any pineapple juice so used apple juice. Also I thought we had honey but the kids ate it all with their pizza crust. So, I just used the Kirkland glaze which I put on the last 30 minutes.

    Smoked it at 210°. All in, it took 7 hours to get it to 138° with an hourly mopping. I also made up a rub and did that the night before. This was the best ham I've ever done which was the consensus of the household.





    After all was said and done, I had 5#'s of leftover meat. Vac packed it for later. Put all the chunk meat in a single bag for ham salad, etc. at a later date.





    Anyway, this should hold us for awhile.

      That looks fantastic Pete. I've never done a spiral ham for some reason, thanks for the post and I'll go mend my ways.

      My best asset however is the inspiration from the members on this forum.

        Thanks guys. I just find them easier to work with and faster (45 minutes per lb vs. 1 hour on a regular) than a regular ham. If you do a spiral, you have to let gravity help. Lay it on it's side and it doesn't work. Ask me how I know....

        Plus, you get to the lower portion of the leg and the spiral is gone. I just cut it off, chunk it and make ham salad or the mac and cheese deal with that portion.

                            I haven't smoked one of the kirkland hams (yet)...definitely on my radar!

                            Tru Dat, spiral slicinin' daddy! I love the costco hams too...and I also love their glaze packet. I have done a couple using a different glazes like this one (which is money), so I have a couple of the dry kirkland glaze packets that ended up in my spice tub in the pantry. I use those to sprinkle on bacon on a broiler pan in the oven which really works too!!

                            Anymore, after I cook the ham, I put it on a sheet pan to glaze, and then preserve the defatted ham broth (and there is a lot with those kirkland hams). I use that as the base for ham and corn chowder or ham and beans. I swear it is worth buying the ham just for that liquid golden flavor punch. (Just be careful to cut the salt with other components).
