  • Red Sauce Chicken Enchaladas

    So I did these from scratch

    I used an Ancho Chili with the onions and Jalapeno
    Use a can of chicken stock in place of water and boil down
    After draining the Red Sauce I put it in a put and took it to a boil then added a flour water slurry to thicken
    Corn tortillas cant be done with water in the microwave.... lightly oil and fry in pan just before brown they dont split when rolled

            Those look really good.

            I like this recipe, it's nice and simple. I have a couple different enchilada recipes I've saved but making the red sauce part is a bit involved in them. I'm going to give this one a try.

                Thanks for that tip. I hate working with corn tortillas because they always break on me, even after the microwave. I need to try the pan fry trick.

                    I do a quick spray on either side with some cooking spray and in a hot pan for just enough time to take the raw corn taste out. Works great for tacos too.
