Nice easy dinner that's mostly pre-made.
I took a duroc pork tenderloin and cut it into about 1.5 inch pieces, then pounded them down to around 1/4" thick. Then did the flour/egg wash/bread crumb thing.
Let them sit for a little bit while I made up a bit of spicy coleslaw. I used a preshredded bag of coleslaw mix, a bit of coleslaw dressing from a jar, and a couple spoonfuls of the Huy Fong Chili Garlic sauce. It had a nice kick that you don't really notice at first, but builds up in the back of your throat.
Then I pan fried the pork until golden brown and delicious. I used the King's Hawaiian sweet slider rolls with a little mayo, slaw and the pork.
I should have made a double batch because they were literally gone before I could get my phone to take a picture.
