Someone asked me the other day how I do my bacon weave. Since, we don't have a step by step of this here yet I figured I'd get mine on here. I saw one once before doing it right on the fattie, but I've found that that is much more labor intensive.
Since Capt Dan's "help on rolling a fatty" thread http://www.smoked-meat.com/forum/showthread.php?t=318 is the way I do mine, this flows right in on that process.
I start off with 2 pieces of bacon like this, on syran wrap of course.
Than I will lay out the bacon lengthwise but will be picking them up each step of the way.

than it's just a matter of taking turns on the rows...
and the finished weave sitting back waiting for the fatty to come take a sit.
Here is where I find that doing the weave on the syran wrap is better than doing it right on the fatty. If you follow Capt Dan's method, it allows the bacon to also tighten around the fatty. Holding it together much nicer for them fatties that you end up over stuffing.
I'll lay the fatty down in the middle of the weave
Flip one side up on the top
Than the other side, than get it ready for tightening
this is a different Weaved Fatty, but it was handy for this show.
If you haven't done a Bacon Weave yet, ya gotta try it. This really gives your fatty the final touch for those your feeding.
