      I buy it fresh... The water and the fat in the sausage cooks the dough to the correct consistency...

                Never done a bacon wrap, and most likely I wont ever.. I like them the traditional way.. Plus I thought in the beginning the bacon was to help keep from having blow outs..

                If its rolled right you wont have any blow outs..
                Ken's right - the bacon is much better on the inside of the fatty :-)
                So fresh tortelloni's don't ned to be cooked first - right, I ws going to ask that as well :-)
                Well in that case looks like I'm making a tortelloni fatty this weekend :-)
                Now all I have to decide is whether to get the pasta machine out and make the tortelloni as well lol
