Finally got around to making my fattie for the day.. .I will be taking this one to the office to snack on over the next few days..


Sure wish I would have had some Italian cheese mix.. Maybe next time..






Rolled and ready for smoke...


I dusted it with a little Smitty's... Love a little heat..






Hope to have it off in a couple of hours... The damn chuckie is stalled at 152*... Sheesh..

ekn, looks good.. I bet you are a hit at the office also.
they hated to see me leave at the fire station..it was my test kitchen.lol.
I made food with peppers from panama' one time for all the mexicans there that said no pepper was to hot.
hehehe..little did they know by not finding out about other cultures but their own, that there was some hot stuff on this planet.
we could see the sinus track on one guy turn bright red on the out side of his face. sweat started sprayin out of him lol.

and the same day, station number 2 came up to raid as they normaly did. 5guys with the combined weight of the USS enterprise all at least 6' and change.

well so happens I had extra peppers and they were on the counter. they swiped em.. took them back and put them in their big pot of soup. lol. they could not eat it as hard as they tried.. they had to throw it out for the coyotes..

But, back to fattie..looks good. I made one today also. Pics later. I use the big family chub. and seem to over fill it. always. I am hoping for no blow outs on it.. but I think it might.

Never done a bacon wrap, and most likely I wont ever.. I like them the traditional way.. Plus I thought in the beginning the bacon was to help keep from having blow outs..

If its rolled right you wont have any blow outs..

Ken that is beautious, I love the spinach torts, great eye candy right there! I have never smoked one all nuded up as well, gonna have to try it, maybe a squeef mix with no bacon! YUMMY Ken!
