Breakfast Fatty & Armadillo Eggs

Well, I went to the son's this last weekend to smoke up some turkeys we had. I decided to get up early and treat him to some good breakfast.

I started with a couple pounds of Jimmy Dean sausage. Covered six hard boiled eggs with sausage and wrapped with a strip of bacon.





Flattened out the remaining sausage and topped with Cheddar cheese, scrambled egg and drizzled with maple syrup.



Even had to try my hand at the bacon weave.



Smoked at 250 with hickory. All was done when the fatty reached 165 internal.

Now thats a damn fine looking breakfast. And a great job on the weave.. Well done. Your son made out like a bandit.

Crikey, I would do just about anything for a platter of that stuff right about now! Lets see if this point thingy works!:D

Yes, my son made out well. I have a pregnant daughter-in-law, and a fussy grandson, so I couldn't go too wild. But, my son now knows how to do this on his own. He can make them on the grill or on the smoker he'll be getting from me this spring.

You never mop up the leftover syrup on the plate with your bacon or sausage? Never tried maple flavored sausage links? You must not like syrup.

CA .... they have eat some strange things for breakfast over here. Although i have to say, pancakes, sausage and maple syrup is actually pretty good.

I've told people here what is in a full english breakfast, they think that it's strange when i mention baked beans. Takes all sorts i guess!
