So I wanted to try Curious Aardvark's lemon curd, so I put together a pie for after dinner.
I didn't to a full blown tart, and as I was at the store, I picked up a premade pie shell. I'll do my own crust next time, I was short on time today.
I made his lemon curd as directed. It was really easy and so good. I can tell you that I'll probably make some more of this this weekend and just put it in little custard cups to eat with a spoon...it was that easy and that good.
I put mine in a pie shell (I didn't mix with cream cheese like he did with his peach tart) and the finished consistency was a little more custardy but delicious.

Out of the oven.

I whipped up some wild blueberry pie filling (wild blueberries, cinnamon, a small squirt of agave nectar, and a small bit of cornstarch to thicken it up).

Mrs. Engineer's slice. Thanks CA...she loved it! She doesn't have a big sweet tooth, and for her birthday she had a birthday lemon meringue pie. She thought this was so thoughtful and really enjoyed it. The blueberries and the tart lemon curd played really well together.
