  • CA's Lemon Curd and Blueberries - Yeah, It's A Keeper!

    So I wanted to try Curious Aardvark's lemon curd, so I put together a pie for after dinner.

    I didn't to a full blown tart, and as I was at the store, I picked up a premade pie shell. I'll do my own crust next time, I was short on time today.

    I made his lemon curd as directed. It was really easy and so good. I can tell you that I'll probably make some more of this this weekend and just put it in little custard cups to eat with a spoon...it was that easy and that good.

    I put mine in a pie shell (I didn't mix with cream cheese like he did with his peach tart) and the finished consistency was a little more custardy but delicious.


    Out of the oven.


    I whipped up some wild blueberry pie filling (wild blueberries, cinnamon, a small squirt of agave nectar, and a small bit of cornstarch to thicken it up).


    Mrs. Engineer's slice. Thanks CA...she loved it! She doesn't have a big sweet tooth, and for her birthday she had a birthday lemon meringue pie. She thought this was so thoughtful and really enjoyed it. The blueberries and the tart lemon curd played really well together.


    This is easy to do and I didn't use every bowl that I have to make it.

      Problem with lemon curd is that it's ridiculously easy to make and even easier to eat :-)

      My favourite is to make small tarts with it, but big ones work too :-)

      Nice job

      if you put it into small clean jars directly from the microwave (make sure it's boiled) and stick the lid on. It'll keep for a long time, doesn't need to be refrigerated untill opened. So good for gifts etc.

      Microwaving is a great way to sterilise as it directly cooks and destroys any bacteria, so you don't need to go through the whole canning process of heating the filled jars up.

      You can also use the same method to make any other curd: raspberry is good, mango works well.
      With most fruit you'll need to make a puree and reduce to remove water and concentrate the flavour.

      For a real bonnet puller make a lime curd :-)
