    I had some requests to show how I made Canadian Pea Meal Bacon. First of all Pea Meal Bacon is not "smoked" it's made to pan fry only! It's basically Canadian Pickled loin. I personally do it in the morning with sausages and eggs. If you smoke it, it becomes Canadian Bacon which I've done many times and I love it as well and to "OFG" this is an "American Site" so we call it "Canadian Bacon" here, but if you want to try the original here's the recipe!

    Canadian Pea Meal Brine:

    Ingredients:

    1 gallon water
    1 cup kosher salt
    1 cup dark brown sugar
    3 tbs cure #1 (pink salt)
    1 tbsp all spice
    1 tbsp juniper berries
    1 tbsp mustard seed
    1 tbsp whole coriander seed
    1 tbsp whole pepper
    1 tbsp whole clove
    5 whole bay leaves

    Bring all ingredients to boil and then simmer for 10 minutes, let cool before you add the loins.

    Place the brine with loin/loins in a refrigerator for 6 to 7 days, 8 maximum.

    I do 7 days which is more than enough, no less than 5 days.

    Please make sure loin/loins are completely submerged for as long as their in the brine.

    After the loin/loins are done, pat dry with a paper towel.

    Again with a paper towel rub the loin/loins with oil and roll with fine "Corn Meal" Back in the day they use to use "Pea Meal" hence the name but now we use "Corn Meal Instead".

    Pan fry and enjoy. Once you try true "Pea Meal Bacon" you'll never go back to "Canadian Bacon" again. At least that's my look on it! But again I do both so I'm full of shit!

      Thank you. I haven't had pea meal bacon in decades. I will make some. Only way I've had it was with pea meal not corn meal.

          Har! We just call this Pea Meal bacon here and I love it. I've never made it though so this is definitely going on my to do list! Thanks and points!

                      Looks like a great recipe Zeek.. Oh, I probably said too much..I am a notorious thread killer it seems and it just wouldnt be right if it got buried before everyone got your recipe..hehe.
