  • Smoked Bear Ribs

    I did these for a Super Bowl party. Buddy of mine shot a bear in da UP last year and saved the rib cage. We've been trying to find the right time to give this a whirl and this seemed perfect. If they didn't pan out the lots of other food to eat.



    Trimmed them up and removed most of the fat. Rubbed them up and laid on some bacon for moisture and flavor.Smoked them on the GOSM for about 3.5 hours.



    And then finished in the over for another 2.5 hours.




    Forgot to take the camera to the party to get pics of them slice up but they turned out great. Everyone who tried them raved!

    How would you describe the flavor/texture? Smoking bear ribs is definately worth points. Awesome.

      Thanx for the points! I'd say the texture of the rib meat was similar to pork. The rib bones themselves were long and skinny but had a good amount of meat and pulled away from the bone easy. The flavor was like a cross between beef and venison. I did not sauce them but I did mop several times during the process with a mixture of white grape juice and bourbon.

                Brave man, I have had bear in the past, it can be quite gamy if not done correctly, especially the roasts. Nice job, takin the chance with a large gathering of guests.

                          Ive had smoked bear hinds they were great , Ive had steaks not to fond of them . Now ribs never really thought about them how was the fat between the layers of meat on the ribs must of been Okay if they went over well .

                              I'm not an expert on bear meat by any stretch but I was told by a few people that bear fat is different than other animal fat and that you want to remove most of it. The rib cages had a lot fat on it so I trimmed them down pretty good then draped bacon over them while smoking. The folks at the party that liked wild game loved them, some other folks there that were not game eaters that tried them liked them also.
