5 lbs meat
1 tsp. pink salt #1
2 cups soy sauce
1 cup water
1/2 cup worcestershire
1/4 cup brown sugar
5 cloves garlic smashed
2 Tbsp. Cracked black pepper
1 Tbsp. Onion powder
2 tsp. red pepper flakes
1 tsp. cayenne pepper
1 tsp. mustard powder
Marinate 48 hours.

well I've got a 5lb hunk of beef in the fridge that's earmarked for jerky - might have to give that a go
Although will have to check I've got a spare bottle of soy sauce before I use up the one in the cupboard
when you say redpepper flakes - do you mean chilli flakes or dried bellpeppers ?
I don't have any cure #1 on hand but I do have Tenderquick. Ya think if I put a half Tablespoon per lb of meat it will be way to salty with the soy sauce?

I think it would be too salty. The jerky is pretty salty already. Take out 1/2 cup soy and use tenderquick and water or apple juice
Yeah my wife needed a few items at the grocery store, so I went with and got some pink salt.... Have the marinade all made up, and my round roast is currently firming up in the freezer for the slicer. Whew, a few weeks ago I smoked 12lbs chedder cheese, then a few days later I cured and smoked a few pheasants, a few days later I did an all dayer and turned two butts into pulled pork. I then picked up a 10lb pork belly which is currently in the fridge dry curing, yesterday I did a few ribeye steaks on the smoker, and today I start marinating 5lbs beef jerky....I am ashamed and feel very guilty. All this and no forum w pics.... I am sorry guys! I tell you what though, the Traeger is getting a workout!!! I thought about also doing some summer sausage for some Christmas gifts. My personal country style sausage inventory is also getting low......hmmm.....
