Here's my entry. I never thought it had a chance to win. I had originally thought about doing meatloaf and then I thought...well, heck, BBQ is good comfort food and this is a BBQ forum so I threw this together...actually twice because the first attempt was tasty but looked horrible!
I first did smoked chicken quarters, beans and a baked potato. I pulled the skin up to get some rub underneath and smoked them on the kettle at the farm. Well, the temps got too high and I guess because I pulled the skin up it started to shrink. It also got really crispy and looked burnt but it was not burnt. I knew about half way through the smoke that it was not going to be presentable.
First attempt - rubbed with MH
They started out looking good...
See how the skin shrank? No, I did not eat it like we think someone else did recently.
Attempt #1 with the Minnesota beer bread from a DO thread. NOT presentable but still very tasty and a good meal and I can assure you none went to waste!
4 days later I decide to try again at home on the Chargriller. This time I didn't mess with the skin and I again rubbed with MH
Also got the idea to cook the beans in an onion so I halved a big onion and hollowed it out some.
I have been buying my bacon from a little grocery store in a small town we go through on the way to the farm. They actually slice it there in their meat department and it's very good and only $3.59 lb.
I also put some S&P on them before filling with the beans.
After plating and getting pictures, I really wished I had used the onion on the left because you can see the beans, it bloomed more, and it was just prettier.
Things were looking good on the smoker so I baked the cornbread and started frying potatoes....can't remember what distracted me but I burned some of the potatoes.
But at least it all came together in the end. And I had to use my "Ho Ho Ho" plate because it's the only one I had that I was sure no one would recognize.
