  • Expresso Rub and Expresso Sauce

    This weeks rub and sauce was copied from a news paper years ago. i have enjoyed them and it is time to pass them on

    Espresso Rub

    2 tbsp dark roast coffee
    2 tbsp smoked paprika
    2 tbsp dark brown sugar
    2 tbsp course salt
    2 tbsp ground pepper
    1 tbsp ancho chilli
    1 tbsp lemon zest

    Espresso grilling sauce

    1 cup brewed dark roast coffe
    1 cup ketchup
    ¼ cup dark brown mustard
    1/3 cup honey
    2 tbsp citrus juice
    2 tbsp hot pepper sauce
    2 tsp ground black pepper
    2 tsp course salt

    Heat to a boil
    Simmer until slightly thickened

          A couple of questions...
          All I have is whole bean... Will that work?
          How do you keep those beans from falling off?







          Anyway, I presume the coffee should be ground fine so you don't get grit stuck in your teeth?

            Yes i use my coffee grinder to grind the beans, to an espresso grind

            Unless i am serving Sambuca and coffee beans as an after dinner drink. In that case i float 3 beans on the liquor
