This was only my 2nd attempt at baked mac 'n cheese that wasn't from a box and this recipe is a keeper! Found the recipe at Gooseberry Patch. They have a lot of great stuff over there.
Instead of topping with the french fried onions, I decided to make a sleeve of Mad Hunky General Purpose crackers and crushed them for the topping. I got that idea from eDj who recently topped some potatoes with Kentucky Fire Crackers.
Original Recipe
10-3/4 oz. can cream of mushroom soup
1/2 c. milk
1/2 t. mustard
1/8 t. pepper
3 c. elbow macaroni, cooked
2 c. shredded Cheddar cheese, divided
1 c. French fried onions
Blend soup, milk, mustard and pepper in a lightly greased 1-1/2 quart casserole dish. Stir in macaroni and 1-1/2 cups cheese. Bake, uncovered, at 350 degrees for 20 minutes. Top with remaining cheese and onions; bake 10 additional minutes. Serves 4.
After adding the macaroni, I thought it needed more milk than the recipe called for. I also used more cheese than what it said.

Best mac 'n cheese I have ever made. Cheese was all melted and gooey and we loved the crunchy MHGP cracker and cheese topping! I wasn't sure at first how I would like the mushroom soup but it added a nice flavor!
