This stuff is killer.
Ingredients
4 lbs jalapeņo peppers seeded and cored if you must, but a real man would use the whole pepper
5 large white onions
1 large red bell pepper
3 Cups white vinegar
1 Cup water
3 cups sugar
3/4 teaspoon turmeric
1 teaspoon dry mustard
1 teaspoon celery seed
1 teaspoon ground ginger
1/4 to 1/2 cup flour

Method
- Chop, grate, shred, or grind (we grind) jalapeņo peppers, onions, and sweet red pepper.
- Combine sugar, spices, 1/4 cup of the flour, vinegar, and water to large pot. Cook slowly until thick. Add vegetables and cook gently for 10 to 15 minutes. Stir constantly so mixture does not scorch. Adjust thickness to your liking. If to thick and a little water and vinegar. If to thin, add a little flour to water and stir into mixture.
- Ladle into hot sterilized jars leaving 1/2 inch head space.
- Process in boiling water bath for 10 minutes.
Makes about 4 quarts
