  • how many pork buts for 75 samiches?

    I buy the two packs from sams and im thinking 4 buts would be more than enough for 75 pulled pork sammiches? Does that sound about right?

    There are some folks on here who do catering so based on what I have read from their posts, I'll take a crack at it.

    At 4 oz per sandwich you'll need 18.75 pounds of cooked meat.
    Figuring 50% recovery, you'll need to start with about 37.5 pounds of uncooked meat.

    At 3 oz per sandwich you'll need just over 14 pounds of cooked meat.
    Figuring 50% recovery, you'll need to start with about 28 pounds of uncooked meat.

    So how ever many butts it takes to get the starting weight you decide to go with.

    Someone feel free to check my math or recommendations.

        That just a rough general estimate. If its less then even better i think your advice is spot on

          40% to 50% weight loss due to fat and shrinkage if I recall correctly.

            Yea that's what the last couple a butts I've smoked did. 40 - 50% is about right. So four 10# butts would do it.

                          i remember seeing a catering chart on here? okay, somewhere in a different life time maybe? it was an excel spread sheet that helped you calculate all these things. does anyone else remember this?

                          Good golly i hate having killed all those brain cells in my younger days...

                              One catering Excel spreadsheet coming up, yes sir. Attached here. But listen, I never go by them charts. Around here a sandwich is a quarter pound or better. Anything else is an appetizer. So at a quarter pound to get 75 sandwiches you would need 19 pounds of smoked pork. You would need to start out with as close to 30 pounds of meat to allow for shrinkage and waste fat.
