  • Im new at this HELP

    hey there everyone im new to the site and fairly new to bbq-in, i have quite a dilemma, there is this bbq smoking contest on the 16
    th of april and my job the group is to come up with a chili dish, i dont know where to begin so if there is anyone out there with any pointers for me to start off with i would greatly appreciate it,

    a few things about the chili dish cant have any beans or any extras only meat and sauce with seasoning

    Welcome to Smoked-Meat... Your not leaving yourself much time to test drive a new chili recipe..

    Not sure what area of the country your at, this will dictate what flavores the chili will have.. Since you are requesting a chili with no fillers (beans, oats, rice) you are looking for a Chili Con Carne...

    Here is a recipe of Texas Red I like to use.. (No it's not my Cookoff recipe guys)

    2 pounds beef or venison
    2-3 small onions, chopped
    3-4 jalepeno peppers, chopped
    3-4 cloves garlic, chopped
    4-5 tablespoons ground chili power
    2 teaspoons ground cumin
    2 teaspoons dried oregano
    1/2 teaspoon black pepper
    1/2 teaspoon white pepper
    1/2 teaspoon cayenne pepper
    salt (about 1/2 teaspoon)
    3 Cup water

    In a large skillet brown the meat. Drain off the fat and add
    the onions, peppers, garlic, oregano, spices and salt. Cook
    until the onions are translucent. Add to a large Dutch oven,
    crock pot, or heavy bottomed pot. Add enough water to cover
    and simmer for a couple of hours. Add more water if needed.

                Smoke that chili!
                Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                My best asset however is the inspiration from the members on this forum.

                          Instead of chilli powder I always use good dried chiles. (6ancho,4guajillo,2chipotle) De-seed them, tear them up, toast in some oil. Then add a beer to the pan and steam with a lid for 10 min. Puree in a food processor with toasted cumin seed. Add oregano,cayenne to the thin paste.

                          Brown ribeye cubed with onions and fresh garlic. Dump the chile sauce over the meat and cook untill thick.Check for s&p.

                          Top with fresh diced white onion, fried tortilla strips, Cotija cheese and cilantro.

                          Thats how i like it!
